Low Carb Cheesy Chicken Corn Casserole
1 lb cooked and chopped chicken breast or thighs
½ lb bacon cooked and crumbled
1 15 oz can of corn
4 oz cream cheese, softened
½ cup shredded pepper jack
1 cup shredded sharp cheddar
½ cup shredded parmesan
1 4oz can diced jalapenos
Salt and pepper
¼ cup half and half
1 tsp paprika
1 tbsp garlic powder
1. Preheat oven to 350 degrees.
2. In a mixing bowl add ½ cup cheddar cheese, pepper jack, parmesan, jalapenos, garlic powder, paprika, salt, pepper, half and half. Stir until combined.
3. Add corn chicken and ½ of the bacon crumbles.
4. Pour into greased baking dish and top with remaining cheddar and ½ the bacon crumbles.
5. Bake for 25-30 minutes or until bubbly.
